Hi everyone!

Welcome to the first "Cooking With The Currys" post. This is where you'll be able to find the yummy recipes I've created complete with ingredients and step by step directions! I truly hope you all enjoy these quick and easy meals from my family to yours.

Today we're laying out out the easy steps and ingredients for tender, juicy and flavorful pan steaks. Hope you enjoy it!

Easy Pan Steaks 

Ingredients (serves 4):
4 Filets (6-8oz)
2 Sprigs of Rosemary
2 Cloves of Garlic
1-2 Tablespoons of Butter (Salted)
1 Tablespoon of Olive Oil

Directions
Preheat your oven to 450 degrees. Heat an oven safe skillet or cast iron skillet on med-high. Place the butter and oil into the pan. When the butter has melted place your salt and peppered steaks into the pan and sear for 2 minutes on each side, or until they are nice and golden brown. Toss in the rosemary and garlic, and place in the heated oven for about 7-9 mins. 7 minutes usually makes for a perfect medium!

Now, here is the trick… are you ready?

LET IT REST!

It is so important to let the steaks rest for about five minutes after they are done. This seals in all of the juices and allows the flavors to mend.

The Curry's Loaded Mashed Potatoes
This is a fun way to spice up your side dish and make it interesting. It's my version of a loaded baked potato without the bacon. I'm not big on baked potatoes, so I mash them. I'm not into sour cream, so I nixed it. I do however LOVE a creamy, smokey and flavorful mashed potato, and this recipe offers all of that and then some. I hope you enjoy it!

Ingredients
4 Large Red Skin Potatoes
1-2 Tablespoons of Cream Cheese
1/2 cup of Smoked Gruyere Cheese

1 Cob of Super Sweet White Corn (freshly cut off of the cob)
Salt and Pepper to taste
Chopped Chives (Optional)

Directions
Boil the potatoes until fork tender, about 10 minutes. Place the potatoes in a bowl while hot and fork mash them. Add in the cream cheese, shredded smoked gruyere and corn. Mix it all together and then add the salt and pepper to taste. Lastly, add in the chives.

Serve these up with our yummy pan steaks and enjoy!
