Hi everyone!

My fresh salmon sandwich is perfect for spring and summer. It's light and fresh yet has a nice wholesome bite to it, leaving you completely satisfied! It goes great with my spicy citrus salad, which is spicy and sweet but surprisingly refreshing! Every bite leaves you wanting more and the flavors are not combative, they are perfectly paired. The Asian pear adds the perfect crunch. This simple salad pairs perfectly with fish, seafood and anything cooked on the BBQ grill! Give 'em a try! Enjoy! 

Fresh Salmon Sandwich

1 bun of your choice (I prefer brioche)
1 4-6 oz filet of Salmon
Pinch of coarse sea salt
Black pepper to taste
1/4 tsp paprika
Handful of arugula
2 tbs butter
1 tsp garlic paste
1/4 cup of plain Greek yogurt
2-3 tbs of basil paste
2 strips brown sugar bacon

For the BACON:
Preheat oven to 425. Place bacon on a baking sheet. Sprinkle with brown sugar and black pepper and bake for 15 mins or until bacon is chewy and the brown sugar has caramelized.

For the SALMON:
Preheat oven to 425. Place filets on a baking sheet and season with paprika, salt and pepper. Bake for 8-10 mins. Squeeze the juice of one lemon wedge over top when cooked.

Spread garlic butter on both sides of the bun (butter and garlic paste) and lightly toast in a pan until golden brown. Next, spread the basil spread on both buns. Place the bacon, salmon and arugula on the sandwich and dig in!!!! I like to stick a knife right through the top of the sandwich. It looks pretty and makes sharing easy!!! But, I doubt you'll want to share ... just saying.

Spicy Citrus Salad

1/4 cup of diced pineapple
1/4 cup of diced mango
1 diced Asian pear
1/4 tsp of chili oil
1 tbsp honey
Pinch of salt
Handful of chopped fresh mint

Simply combine all ingredients in a bowl and mix thoroughly. This can also be prepared and hour or two in advance.
