Hi everyone!

This dish is quick, easy, and bursting with flavor! Shrimp and grits are an unbeatable duo when cooked correctly. I think this recipe does the trick. The sweet 'n' savory shrimp and creamy cheesy grits will make for an unforgettable meal! It’s a stand-alone dish that I believe requires no soup, salad or sides! Give it a try!

Sweet and Savory Shrimp & Grits

For the Grits:
1-cup grits (cooked as directed)
½ cup shredded mild cheddar
½ cup shredded fontina cheese
2 tbsp butter
salt and pepper to taste
1 tsp of truffle oil

After you’ve cooked the grits as directed, simply add in the remainder of the ingredients and mix until smooth and creamy. Be sure to salt and pepper last!

For the Shrimp:
1lb peeled and deveined Jumbo shrimp (tails on)
3 strips of thick cut bacon
½ cup of diced white onion
3 cloves chopped garlic
1 diced yellow bell pepper
1 diced orange bell pepper
1 cup of white wine ( I use Riesling)
3 tbsp brown sugar
salt and pepper to taste
2 tbsp. lemon juice
parsley and green onions for garnish

Fry the strips of bacon and remove from pan. Sautee the onions, bell pepper and garlic in the bacon grease until the onions become translucent. Add in the shrimp and cook until the shrimp begin to gain color. Sprinkle the brown sugar evenly and mix for about 30 seconds. Deglaze the pan with the wine and reduce for about 3-5 minutes. Salt and pepper to your liking if necessary. Lastly, plate the grits family style in a big bowl and pour the shrimp and all of its sauce over top. Garnish with lemon juice, parsley and green onion. Enjoy!!!
